GRAPES: Pinot Noir
TYPE: PetNat; rosè sparkling wine, not disgorgedt
FARMING: organic agriculture not yet certified
SOIL: volcanic rocks and basalts
HARVEST: hand picking
WINE MAKING PROCESS: early harvest; soft crushing of the hole bunches. For this wine we use the second pressing of the Pinot Noir, i.e. the most colorful and aromatic must. Decantation, fermentation and natural fining follow the crushing; the wine is not filtered.
BOTTLE FERMENTATION: using the must from dried Vespaiola

THE WINE - Color: salmon. Bubbles: elegant and delicate. Bouquet: intense aromas of cranberry, raspberry, papaya, grapefruit; delicate hints of flowers, face powder, wet stones and green walnut. Taste and aftertaste: our wine is dry but velvety and fruity; the palate correspond with the nose and reveals a pleasant acidity. Rifermento is an easy sipping wine; a perfect companion for the lukewarm spring weather and for the and summertime.
SERVING TEMPERATURE: 6°
BOSCODIVINO - PURE NATURE: we don’t use any systemic pesticides, herbicides nor animal manure; no product of animal origin (e.g. clarifiers, stabilizers) is used in the production of all our wines.
We’ve decided to be a low environmental impact winery; for this reason we opted for an eco-friendly packaging and we’ve thus selected:
- bottles from recycled glass and of medium weight for lower CO2 emissions in the transport;
- 100% recyclable corks;
- recyclable shrink wraps, produced using biodegradable raw materials and green energy;
- labels from recycled paper;
- boxes from 50% mill broke and 50% recycled paper.
